What’s New with Greenstone

2018 Pink Ribbon Breakfast

On 16th May, Greenstone Insurance hosted our 4th annual Pink Ribbon Breakfast.

A sellout event combined with a successful raffle has resulted in us raising over $1,500 for the NZ Breast Cancer Foundation. Many thanks to Reform Physiotherapy and Kiwi Quinoa for donating prizes for our raffle.

Kiwi Quinoa

Jacqui and husband Dan have pioneered growing quinoa here in New Zealand after noticing that the quinoa-growing regions of Peru looked a lot like home. They produced their first commercial crop in February 2016 and look forward to supplying quinoa to dining tables all over New Zealand.

Here’s a recipe to try using this versatile and healthy grain.

Three Cheese, Salmon and Quinoa Tart


  1. ½ cup quinoa
  2. 2 cups water
  3. 1 teaspoon each of ground coriander, turmeric and cumin
  4. 2 cups spinach leaves
  5. 6 eggs
  6. ½ cup cream
  7. 250gm Ricotta cheese
  8. 1 ½ cups grated tasty cheese
  9. ¾ cup grated parmesan cheese
  10. 2 cloves crushed garlic
  11. Finely grated zest of 1 lemon
  12. Salt & pepper to taste


  1. 100g of cream cheese softened with a drizzle of cream
  2. 100g of smoked salmon with dill, or your favourite grilled veggies


  1. Preheat oven to 180° C. Grease and line a 23cm round spring-form cake tin with baking paper.
  2. Place the quinoa and water in a small saucepan with the coriander, turmeric and cumin.
  3. Bring to the boil and allow to simmer for 15 minutes, then rinse, strain and set aside to cool.
  4. Place the spinach leaves in a sieve or colander and lightly wilt by dousing with boiled water.
  5. Spread out on a paper towel or clean tea towel to absorb excess moisture.
  6. In a large bowl, whisk the eggs and cream and season well with salt and pepper. Stir in the three cheeses, quinoa, spinach, garlic and lemon.
  7. Pour into the lined tin and bake for 35-40 minutes or until the tart is puffed and golden and no longer wobbly in the centre.
  8. Cool in the tin for 20 minutes before removing.
  9. Spread with cream cheese and add your favourite topping.
  10. Serves six.
